The most perfect silky-smooth Hummus

I have been a hummus lover for a good long time, it‘s just the most perfect little dip imaginable. However, I have issues with its texture. It‘s far to grainy and I honestly don’t care for dry-wall texture one bit. As I live in a tiny little Hamlet, buying hummus in store is not an issue but buying smooth hummus is. I found the brand DAILY DIP in my local Billa and immediately fell in love with everything their hummus range had to offer… however, the prices on the hummus were rather high compared to others and so my local store no longer stocks them…

Deli Dip have spoiled me with their hummus texture, and I have been on the quest for a silky-smooth hummus ever since and today I tried something new that did the trick.

Ingredients:

  • 250 gram can of Chickpeas
  • Juice of a whole large Lemon
  • 2-3 tablespoons of Tahini (I prefer the Meridian Brand)
  • Sea Salt & Pepper (to taste)
  • 1 Clove of Garlic (which I always omit)
  • 25-30 ml Oil (Sunflower or Olive)
  • 15-20 ml ice cold Water

Garnish:

  • Handful of Pine Nuts
  • Sprinkle of Zaatar Mixture

So, before we start, let me tell you the secret to my silky smooth hummus because it‘s in the prep.

Rinse off the chickpeas to get rid of the thick syrup around them. Then you must peel their skin off COMPLETELY. Yes, you heard me right, the skin needs to go. It‘s actually fairly easy as they basically just wait for you to peel them with a light squeeze between your fingers. Trust me, it‘s a labour of love but sooo worth it.

Once you have peeled all your chickpeas put all the ingredients except for the pine nuts, oil and zaatar mix into a good food processor (I even use my Nutribullet for it and it works just fine) and mix till it‘s broken down and then, start adding in the oil as you keep mixing.

It usually comes together fast and all that is left is to either plate it with the zaatar mixture and pine nuts on top or store it in an airtight container in the fridge to keep on hand for 4-5 days.

Zaatar Mixture

It‘s not a must have in any case but it is the best herb mixture to put on any hummus in my opinion. You can buy it from Amazon, some of the bigger grocery stores should have it too or you can make it yourself – it‘s super easy.

  • 2 tbsp Sesame Seeds
  • 4 tbsp dried Thyme
  • 4 teaspoons Sumac
  • 2 teaspoons Salt

Give the sesame seeds a dry-roast in a pan until fragrant (takes about 5 minutes on medium-low heat) and then put it in a bowl and mix it all together and you have the Zaatar Mixture which will keep in an airtight container for a couple of months.

Sidenote:

I do omit the garlic often, as I am not a big garlic lover.

You can also use more oil if you like a more full-bodied hummus, just use less water and exchange for the oil of your choosing.
